Style Characteristics Investigation of Quan-Xing Baijiu by Comparing Other Strong-Aroma Baijiu Brands in China

Quan-xing Baijiu, a famous brand with different style characteristics from traditional strong-aroma is considered superior due to its “jiao-xiang” (caramel) flavor and the “he-run” (soft, moistening, harmonious) style. In this study, gas chromatography-olfactometry (GC-O) was used analyze special flavors of Baijiu. The fingerprints six Baijiu were determined using fragrance, taste, entirety in order establish individual results indicated that 3-methyl butanol, ethyl butyrate, hexanoate, acetate, caprylate main important aroma compound, which contributed he-run A standard Baijiu’s typical established by fingerprint. Together concordance rate evaluation method, can help determine samples for quality control. above 81% represents product staleness good stability, while below 73% nontypical product.
